This recipe is something I have made for years and it is always a crowd pleaser. My favorite thing about this recipe is that you can make it the night before 🙂 Enjoy this recipe from my kitchen to yours. I have included on how to make this recipe gluten – free below. I know this will sound very silly but this recipe really “sings” – meaning there are TONS of flavors that simply just work 😉
What You Need
flour tortillas ( corn if you want to make a gluten – free version)
8 ounces cream cheese, softened
1 cup sour cream
1 Chopped Jalapenos ( seeded)
2 teaspoons chopped green onion
1/2 diced green pepper
1/4 Teaspoon of Salt
1/2 teaspoon of onion powder
1/2 teaspoon of garlic powder
1.5 Teaspoons of pepper
12 ounces sharp Cheddar cheese, grated
Salsa
1 Tablespoon of finely chopped cilantro
1 Teaspoon of lime juice and plenty of zest
1 Tablespoon of Olive Oil
What To Do
1) Heat oil in a pan and add green pepper, Jalapenos , and salt. Cook till tender about 10 minutes
2) In a medium-sized bowl mix – cream cheese, sour cream, cheddar cheese, onion powder, green onions, garlic powder, pepper, cilantro, lime juice; sauteed green peppers and sauteed Jalapenos.
Store any leftover pinwheel sandwiches in an airtight container—but not for too long! Gobbling them up within a day or two is the tastiest option. If you wait any longer, they can get soggy.
Warming a flour tortilla, either in a tortilla warmer ( a clay cloche that fits on top of a plate and can be placed in the oven) the microwave, or s few seconds on a warm skillet will add a flexibility to the flour tortilla, and allow it to be rolled or folded without breaking.
Tightly roll up each of the tortillas and wrap each one in foil or plastic wrap; refrigerate the pinwheels overnight. Before serving, slice each roll up into ¼-inch slices. Arrange them on a platter or feed them to your ravenous family as you slice them.
Start by placing a layer of greens on the wrap to act as a barrier between the fillings and the wrap itself. You can use lettuce, spinach or other types of greens. They will also help prevent the wrap from becoming soggy.
Heat the oil to ~350F.Place a tortilla in the hot oil for about 30 to 40 seconds then turn over for another 30 to 40 seconds.Place the tortilla on a paper towel to remove excess oil. The tortilla will then be much more flexible.
What makes flour tortillas hard is not adding enough lard or oil and water and not kneading the dough for the required amount of time, and NOT allowing the dough to rest in a warm place at least 30 minutes before making flour tortillas.
Roll out the dough evenly: When rolling out the dough, make sure it is rolled out evenly, with no thick or thin spots. This will help the tortillas cook evenly and puff up. Preheat the skillet or griddle: A hot skillet or griddle will help the tortillas cook quickly and puff up.
Store your pinwheels in the refrigerator. These pinwheels taste great both warm and at room temperature, so they're ideal for entertaining. How Long will Pinwheels Keep in the Refrigerator? You can store pinwheels in the refrigerator for up to 4 days.
Ham and cheese pinwheels can be frozen in an airtight container (with layers of baking paper in between) for up to 3 months. They can be defrosted and reheated, or reheated directly from frozen.
Try to avoid too many wet ingredients, such as an excess of dressing or sauce. If possible, you want to use fewer wet ingredients because moisture can eventually make your wrap soggy and fall apart. If you're not eating it right away, wrap it in foil. Foil is strong enough to help the wrap hold its shape.
