The secret to making a great roast is not only choosing the perfect cut and having a great rub recipe but also cooking it slowly. Especially an inexpensive cut like this one.
Spices like paprika, cayenne pepper, oregano, thyme, onion powder, and minced garlic mixed with olive oil not only give the roast great flavor but also give it great color. It is as pleasing to the eye as it is tasty.
WHAT IS A SIRLOIN TIP ROAST?
It is a cut obtained from the hindquarters of the cow. It is also called a round-tip roast. It is recommended that it be slowly cooked, because the larger the muscle, the tougher the cut. Slow cooking tenderizes the meat.
HOW TO COOK SIRLOIN TIP ROAST?
- In a small bowl mix the minced garlic, salt, pepper, and spices with the olive oil and let the mixture sit for 15 mins
- Preheat the oven to 450F. Brush the roast on all sides with the mixture until well covered
- Place the roast on a foil-lined baking sheet and cook it for one hour. Let it rest for 15 minutes before slicing.
HOW LONG TO COOK A SIRLOIN TIP ROAST?
The basic rule is to cook it for 20-22 minutes per pound. You can also use a meat thermometer and depending on how you like your meat, use this rule:
- Rare: 120-125 degrees in the middle
- Medium rare: 130-135 degrees in the middle
- Medium: 140 degrees in the middle
- Well done: 160 degrees and over
WHAT TO SERVE WITH SIRLOIN TIP ROAST?
I like to make my life easy, so I throw some Russet potatoes in the oven with my roast, but if I have some time I make my family Pan Fried Potatoes and Onions.
Add a tossed salad or Caesar salad dressing and you’re done!

It’s always good to have a meat thermometer. That way you know exactly when to pull it out according to your liking.

Lower temperature to 400 and use a meat thermometer to check desired doneness. Take it out when temperature is met and rest for 15 min. I use a meater thermometer. Works great but a bit pricey. Just keep checking temperature.

Can I sear it in an iron skillet first, then based it with the seasoning, then put it in the oven?

What do you mean slow cooking makes it tender but 450 degrees for 1 hour? Won’t that make it tough? Not sure,I don’t cook roasts often….

One hour is a lot of time for me. Usually, when I cook meat, I give it a quick sear on the stovetop and then finish it in the oven. But you may be right. One hour doesn’t seem like a lot of time. Check it for doneness with a meat thermometer just to be sure.

I have a 10 lb Sirloin roast. I will put a thermometer in it, but was wondering how long I should cook it. 450° seems pretty hot and might make the outside burnt? Before the inside gets done?

You can cover it with foil for the first half hour and then remove the foil. This way you start the cooking process without it browning too much.
