KITKAT TRUFFLE RECIPE

I used the same concept that cake balls are made with for these truffles. Therefore, I chose a Kitkat candy bar because it has the wafer inside, unlike candy bars that are all good. By that, I mean all soft ingredients like chocolate, nougat, and caramel. I thought the wafer would give it substance.

I haven’t tried other candy bars to see if they work. I’ll update this post when/if I do.

TIPS

You can get KitKat candy bar minis now that are already unwrapped which is a huge time saver in this recipe.

For the chocolate coating, I like to use dark chocolate. It’s a nice contrast since the candy bars are so sweet. However, you can use dark chocolate, milk chocolate, or white chocolate. I do recommend using Wilton Candy Melts for a smooth, even coating.

You can add a decoration on top if you choose or leave them plain.

Melting chocolate can be tricky, frustrating, and irritating! I wrote this postHow to Melt Chocolatethat may help you.

HOW TO MAKE Kitkat Truffle Recipe

This recipe is about as simple as it gets.

  1. First, you want to crush the Kitkat candy bars. I put them in a freezer-style ziptop bag. Then I took my frustrations out and beat them with a meat mallet until they were crumbs.
  2. Next, I poured the Kitkat crumbs into a bowl and added sweetened condensed milk.
  3. Stir until it’s gooey and sticks together.
  4. Chill
  5. Form into balls. I found it easier to use a spring-release scoop (small ice cream scoop). The scoop I used was about 1/2 tablespoon.
  6. Finally, dip the balls in melted chocolate and allow to set.

These truffles are okay to set on the counter for a couple of days. However, if you need to keep them for longer than that, I recommend storing them in an airtight container in the refrigerator.

Forming Truffles

It helps if you have cold hands or are in a cool room. Chill the truffles briefly, for about 15 minutes, while you prepare whatever you'd like to enrobe them in. If your ganache isn't firm enough to scoop into balls, you can chill it in the fridge to harden.

What if my truffle mixture is too runny? ›

If the mixture is getting too soft, put it in the fridge or freezer and let it firm up before continuing.

Why did my chocolate truffle mixture separated? ›

Heating the cream to the wrong temperature

If the cream is boiling, it will cause the cocoa butter to separate from the chocolate, turning the truffles greasy. Of course, it needs to be hot enough to melt the chocolate, so too-cool cream won't get the job done either.

Why is my truffle mix not setting? ›

And remember, the whole point of a chocolate truffle is, well, the chocolate, so don't get carried away with other flavourings (alcohol or vanilla extract, for example), which might turn the mix liquidy. If, however, you want to up the ante, infuse the cream first.

How do you fix a separated chocolate truffle? ›

Reversing the reaction means adding just enough water (or other liquid) to dissolve most of the sugar and cocoa particles in the seized chocolate clumps. It's easy to do: Simply add boiling water to seized chocolate, 1 teaspoon at a time, and stir vigorously after each addition until the chocolate is smooth.

Why does my truffle have no taste? ›

Do homemade truffles need to be refrigerated? ›

Because of the fresh cream, truffles do need to be chilled (and no, a chilly garage does not count!). To keep the truffles fresh, seal them in an airtight container. This will prevent any fridge smells from infiltrating the delicate chocolate flavors. Here's a step-by-step guide on how to make chocolate truffles.
