Ingredients
- 1 cup granulated sugar shopping list
- 1/2 cup shortening shopping list
- 4 egg whites shopping list
- 1 tsp almond extract shopping list
- 2 cups cake flour shopping list
- 3 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/2 cup milk or 1/4 cup evaporated milk diluted q/ 1/4 cup water shopping list
- OR FOR milk FREE VERSION: shopping list
- 1/4 cup coconut milk DILUTED W/ 1/4 CUP water shopping list
How to make it
- Cream sugar and shortening. Sift flour first then measure. Sift this with baking powder and salt.
- Add alternately w/ milk to creamed sugar and shortening. Beat thoroughly. Add extract.
- Incorporate egg whites well one at a time. Pour into greased and floured cake pans. Bake at 375F for about 20 min. Test w/ toothpick.
- This recipe is wonderful for cupcakes too! Makes about 24 cupcakes.

Was this review helpful? Yes FlagI made this today, I really love the texture, it's very soft and spongy, but I was not too fond of the taste, it has a strong taste of flour, I just added a strawberry filling and buttercream frosting, so I hope that would improve the taste

This is a lovely and versatile recipe! I used the zest of an orange in place of the almond extract and the juice of the orange in place of the milk. Topped with chocolate frosting, the cupcakes I made using this recipe and my modifications were well-received by all who ate them:)

Was this review helpful? Yes Flagwell i was slightly disappointed. its a great recipe, but the almond essence was too much and kind of overpowering. next time i think of making it i mite put in 1/2 a tsp of extract. but over all, it was not bad. good i would say. not great.

It was easy to make and delicious! I added strawberry frosting made with crushed fresh strawberries, confectioners sugar, and a little soft butter. The strawberry was a great compliment for the almond flavoring. Yum!

Yes FlagThe almond extract really makes this cake recipe perfect...oddly enough, I was just looking at a recipe on my opened cookbook that sits a top of my dresser in the kitchen (it houses napkins and linens) and I proudly keep my old family' cookbook opened and change the page shown every few days...it had a recipe for a delicate chocolate cake...I now can have one for a delicate white cake thanks to you.... thanks for sharing!

If you choose to use coconut milk (canned) it does not change the flavor. It does not leave any coconut notes at all. I strained the coconut milk first before using. :)
